What a creative idea :). Made this for DS and I for lunch today, though I did use canned tuna, (thats what I had on hand), made for a delightful light lunch. Though my DS thought at first are we having ice cream for lunch.. I might have during my bacholer days, she gave it a 5 for creativity. We enjoyed the veggies in these little treats, and will be making these later in the week for an after school treat, and lunch for myself with some of the remaining cones. Tagged and made for PRMR.
- 1 (5 ounce) canchunk canned chicken, breast, drained and flaked (you might try tuna)
- 1⁄4 cup mayonnaise or 1⁄4 cup salad dressing
- 1⁄4 cup shredded carrot
- 2 tablespoons raisins
- 2 tablespoons chopped dry roasted peanuts
- salt and pepper
- 2 ice cream cones
- lettuce leaf
