If you think this will be messy, tedious, and somewhat time consuming, you would be correct. However, this recipe is also 100% worth it! It's amazing, absolutely perfect. My husband and father, neither of which normally like eggplant, devoured this dish. My friend who recommended this to me had the good advice not to assemble and bake this, but simply to serve the components (cheese, sauce, eggplant) at the table. Genius, as you get maximum crispness this way. You can also make this with zucchini, and skip the salting and draining. I cut lengthwise for zucchini; cooking time was the same.
