This is a great, thick cream cheese icing for anything from squares to cakes to (my personal favourite) cookie sandwich filling.
- 2 ounces white chocolate
- 1 cup Oreo cookie crumbs
- 1 (8 ounce) package cream cheese or 1 (8 ounce) package reduced-fat cream cheese
- 1⁄2 cup powdered sugar
- Melt the white chocolate using a double boiler or in the microwave.
- Mix the cookie crumbs and melted chocolate into the softened cream cheese. As it cools quickly, the chocolate make form small pieces in the icing, which adds texture.
- Add powdered sugar until the icing reaches the desired consistancy.
