This looks good; haven't tried it yet, but it looks good! This is from the Inn and Shadow Lawn Bed and Breakfast in Rhode Island.

This is the only pie crust I use these days. It is easy and very flavorful. I use oil instead of butter. I've substituted oatmeal for half the flour for a nutty flavor.

  1. Combine flour, sugar, peel and salt in a bowl.
  2. Cut in butter.
  3. Stir in egg yolk and vanilla; mix till blended.
  4. Press evenly into pie pan.
  5. Bake at 400 degrees F about 10 minutes, or until golden brown.
  6. Cool before filling.
