  • Preheat oven to 350°.
  • Cream together butter and sugars until light and fluffy.
  • Add egg, oil and vanilla. Mix well.
  • Add oats, cornflakes, coconut and nuts. Stir well.
  • Add flour, baking soda and salt. Stir until blended.
  • Drop by teaspoonfuls on cookie sheet and flatten with a fork dipped in water.
  • Bake 10-13 minutes or until done.
  • Options: chocolate chips can be added instead of the walnuts. Dried fruit (eg. dried cranberries or blueberries) can be substituted for the coconut.

  1. This is a must for everyone who is short on time but long on hungry people! It is easy because of the oil, so the process goes quickly. it also uses extra goodies that you have around your kitchen, as substitutions work very well. I substituted granola, rice krispies, pecans, raisons and they taste great and are crispy. I added a little extra due to the rice krispies being so airy, so when the dough feels less sticky, it's right! You can use the beater for the first ingrediants, and then even stirring in the final ingrediants wasn't hard on my arthritic hands! You can also half the dough, put for example chocolate chips etc. in one half, and raisons in the other. I also baked them for at least 15 minutes, as we like them lightly browned.
