Cooked Cuke, Tomato & Watercress Salad

This salad is a bit unique. You may prepare it hours before serving. The watercress gives a lovely bite to the salad

Ingredients Nutrition


  1. Cover the prepared cucumber with water in a saucepan, add salt, bring to a boil and boil 2 minutes, drain.
  2. Place drained cuke on paper towels to dry completely.
  3. Heat oil in a skillet over medium low heat and saute the onion& garlic until softened (apprx 5 minutes).
  4. Remove from heat, stir in the tomato, vinegar, thyme& basil Season with salt& Pepper.
  5. Stir in the cuke Chill in the fridge To serve line plates with watercress and mound on the cuke/tomato mixture.
