This was a delicious dish.I also cut back slightly on the bacon and used low fat sour cream.I used red onion in mine and also added some chopped spring onion.At the end of cooking time I uncovered mine for a few minutes to get a little crust on top.Next time,I think I might bake the potatoes rather than boil,just for that gorgeous baked potato taste. Thanks Mailbelle,it's a keeper.Made for PRMR.

YUMMY but I was not thrilled with the calorie count. I made these exactly as written and everyone enjoyed them.

We loved these so much that I have made them 3 times in the past 2 weeks! I have used Mexican cheese and green chlies for a little Ole' flair to the casserole!

Oh my gosh I could have even the whole casserole myself, very very good!! I am going to make this again and again! Oh yah my family enjoyed it also, LOL! Thank you for posting this recipe!

Gotta admit that I changed a few things when this was made, using, as I did, just 4 slices of bacon & a low-fat sour cream! Still THIS POTATO DISH IS EXCELLENT, & well worth making again, especially if guests devour most of it! I'd even consider making it for my veggie son & DIL, but, of course, without the bacon!
