Consomme Pork Chops and Rice

ingredients
- 473.18 ml long grain rice
- 118.29 ml butter (1 stick)
- 354.88 ml chopped onions (one large onion)
- 2 (595.33 g) can campbells beef consomme soup, gelatin added
- 297.66 g water (1 soup can)
- 2.46 ml fresh ground black pepper
- 907.18 g pork chops (5 medium size)
directions
- Preheat oven to 350 degrees.
- Over medium high heat in dutch oven on the stove, combine rice, butter and onion. Cook until rice is lightly browned, butter melted and onion soft.
- Add 2 cans Consomme Beef soup
- Add 1 can water.
- Add 1/2 teaspoon fresh ground black pepper.
- Bring to a boil.
- lightly spray a 9X13 pan and pour mixture into sprayed pan; distributing mixture evenly.
- lay pork chops in a single layer over the top.
- Bake for 1 hour uncovered.

I've made a version of this for over 30 years. I brown the chops first and add 1/4 cup ketchup to the liquid. I like to put sliced mushrooms in mine, too, though the original recipe didn't call for that. I cover mine tightly with foil and cook in the oven for about an hour. I've found that Uncle Ben's instant brown rice is great for this dish.
