Confetti Coleslaw

"An easy to make coleslaw with a low-fat creamy tangy dressing. I like to add a little bit of red cabbage for some more colour. Recipe from Company's Coming Lunches."

  • In a large bowl, combine cabbage, carrot, green onion, chill.
  • Mix together salad dressing ingredients with a wire whisk.
  • Just before serving the coleslaw, add in the tomato and toss in the dressing.

  1. Meant to review right after enjoying this delicious, delicious coleslaw - it made for a great addition to our grilled burgers. Made as posted with the tomato making for an added change of pace slaw. Always say one cannot have too many good coleslaw recipes - and this one is good -have added this to my collection.   2. The dressing is delicious. I used yellow mustard. Dijon would be good also. I used olive oil mayonnaise. I didn't use the celery seed. This is very good and easy to do. Thanks Luv 2 Bake. Made for the Babes of ZWT4
     
  3. Loved this! Quite creamy and filling. I had a bag of cabbage and carrots to which I added extra carrot. I wish I had the red cabbage, it would have been prettier. My only changes were to make it with 4 cups cabbage instead of 3, and I didn't have celery seed or onion powder so I used dried minced onions and celery salt. Served it with black bean burgers. Thanks!

  5. This coleslaw is so quick and easy to make! I used one bag of pre-packaged cole slaw mix that included carrots and red cabbage. I tripled the ingredients for the dressing since I used about 8 cups of coleslaw mix. Didnt have low-fat mayo so used regular and also Splenda but only about 1 teaspoon since it is pretty sweet. Love celery seeds so they were a must! This coleslaw does not have the tart/sweet flavor, a heavier creamy flavor that works well with the cabbage. I served the chopped tomato along side the coleslaw instead of stirred in.

Hi! Thanks for visiting my page! I just graduated with a Bachelor of Science in Human Nutritional Sciences in May 2008 after 5 years of hard work. My hard work paid off as I was accepted to a post graduate dietetic internship which I am currently completing and will be done in June. The internship allows me achieve professional designation as a registered dietitian. I have always loved baking and cooking and looking for healthier recipes or ways to make recipes healthier to fit into my lifestyle. I am pesco-vegetarian as I do not want animals to suffer for my consumption. I also love to be active in individual sports and train year round for triathlon. I am both an active racer and volunteer. The distance I prefer most is the Sprint distance - 750m swim, 20km bike, 5km run. This upcoming race season marks my 16th year of participating in triathlon. I love it just as much, if not more, than I did 16 years ago!! I also have a newfound love for Iyengar yoga. I have a profound love for animals and the pretty little kitty you see as my icon is my 16 1/2 year old cat Snuggles. Sadly, Snug passed away in March 2006, and is dearly, dearly missed.
