  1. Combine dry ingredients in large bowl.
  2. Stir in carrots, apples, raisins, and pecans.
  3. Make a well in the center, and add wet ingredients. Stir until just moistened.
  4. Pour into greased muffin tins.
  5. Bake 375 18-20 minutes.

I have been making these for years. Decades, actually. Pretty much the only muffin recipe I use. They are the best!

very tasty, they stay moist and freeze well. the batter seemed wet but cooked up fine. with the raisins we added chopped dates, apricots and prunes and hulled hemp seeds. i'll make these again soon!
