Comforting Broccoli Soup

"This is one of my favorite soup recipes, and luckily, also one of the easiest! It tastes every bit as good if you substitute cauliflower for the broccoli, or if you use half broccoli and half cauliflower."

  • In a large soup pot, heat olive oil and sauté the onion and garlic, about 5 minutes.
  • Add celery, potatoes, broccoli, and spices and stir.
  • Add vegetable broth and bring to a boil. Simmer 20 minutes.
  • Purée and enjoy!

  1. Can't rate this yet but I am filing it away for winter when we use a lot of soups. This looks very good and has all the ingredients that we enjoy. Thanks for submitting. If I make it sooner will review again with a rating. Weather cooled down so back to making soups. This is great. I substitute leeks for onion, but always do because we love them. Very easy and healthy.
