Comforting Broccoli Soup

ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 2 stalks celery, chopped
- 2 potatoes, peeled and chopped
- 6 cups broccoli, chopped
- 1 teaspoon basil
- 1 teaspoon savory
- 1⁄2 teaspoon curry powder
- 1⁄2 teaspoon thyme
- 1⁄8 teaspoon nutmeg
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 4 cups vegetable broth
directions
- In a large soup pot, heat olive oil and sauté the onion and garlic, about 5 minutes.
- Add celery, potatoes, broccoli, and spices and stir.
- Add vegetable broth and bring to a boil. Simmer 20 minutes.
- Purée and enjoy!

Can't rate this yet but I am filing it away for winter when we use a lot of soups. This looks very good and has all the ingredients that we enjoy. Thanks for submitting. If I make it sooner will review again with a rating. Weather cooled down so back to making soups. This is great. I substitute leeks for onion, but always do because we love them. Very easy and healthy.
