- 473.18 ml frozen corn, thawed
- 538.64 g can black beans, drained and rinsed
- 59.14 ml red pepper, chopped
- 113.39 g can green chilies, drained
- 59.14 ml minced cilantro
- 4 green onions, chopped
- 340.19 g surimi (artificial crab meat)
- 2 clove garlic, minced
- 4.92 ml cumin
- 1.23 ml black pepper
- 9.85 ml white wine vinegar
- 9.85 ml fresh lime juice
- 9.85 ml water
- 44.37 ml olive oil
- 2 jalapeno peppers, sliced
directions
- Mix together corn, black beans, red pepper, chilies, cilantro, green onions and seafood.
- Add cumin and pepper to minced or crushed garlic.
- Mix into a paste.
- Add vinegar, lime juice and water to garlic mixture.
- Mix well.
- Whisk in olive oil.
- Pour dressing over corn, bean mixture and stir well.
- Top with thinly sliced jalapeno peppers.

Great Salad - served it to guests this weekend at a BBQ. We all felt it needed just a bit more "tang" so I'll try it next time with a little extra vinegar, carefully so as not to overpower it becuase the salad has a great mix of flavors to begin with. It was a recommended salad - definitely worth trying!
