This delicious salad is served at the Colony Inn Restaurant located in the Amana Colonies in Iowa. You can buy jars of their own wonderful sauerkraut in the Colonies and in groceries in the surrounding area. The rest of us have to make do with what we can find! They graciously share their recipe for the asking.
- 1 quart sauerkraut
- 1 cup diced celery
- 1⁄2 onion, chopped (medium)
- 1 cup sugar
- 1⁄2 cup salad oil (Wesson Oil)
- 1⁄4 cup red and green pepper, chopped (for taste and color)
- Mix all ingredients thoroughly.
- Let stand overnight.
