Colonel Sanders' Bean Salad

This is my personal recipe for three-bean salad, which was served in my restaurants.

I couldn't find individual 20-ounce sized cans of wax beans so I used three 14.5 ounce cans Del Monte Cut Green and Wax Beans as the source of both. I feel 3/4 cup sugar is much too much, but that's just my preference! I used only 2 1/2 tablespoons sugar, which was just right for me. The dressing was still bland, so I increased the pepper to 1 teaspoon, added 2 teaspoons of Italian seasoning, 1/2 teaspoon lemon pepper and 1/4 teaspoon garlic powder. The end result was a 5-star salad, but only because of the adjustments, in my opinion.

Directions

  1. Drain all beans well.
  2. Rinse the kidney beans.
  3. Combine vegetable oil, cider vinegar, sugar, salt and pepper.
  4. Pour dressing mixture over beans in a bowl and toss well.
  5. Let marinate in the refrigerator overnight.
  6. Serve.
