I love collard greens and this was a great way to fix them. I doubled the recipe using 2 pounds of greens. I used Morning Star breakfast strips and mesquite liquid smoke. YUM! Made for PAC event in the contest forum. :)

  1. Saute the onion and salt in oil over medium heat until the onions are very soft and begin to caramelize.
  2. Add the Fakin Bakin and keep stirring until the tempeh crisps.
  3. Add the entire bag of frozen collards and the broth. Stir to help the greens defrost faster.
  4. After the greens have softened up a bit, stir in the nutritional yeast flakes and liquid smoke.
  5. Reduce heat and cover until the collards become tender. If there is too much broth in the bottom of the pan, cook for a few minutes with the lid off to let the liquid reduce.
  6. Season with salt and pepper.
