Cole Family Fish Stew

"Don't know where this recipe came from originally, but it's been in our family for 40 years. When I lived on the West Coast, we made it with turbot; here in Downeast Maine, haddock is our "go to" fish. All of the seasoning amounts are just suggestions -- do what tastes best to you!"

  • Put whole tomatoes and clam juice in large saucepan or dutch oven.
  • Bring to boil, breaking up tomatoes with a potato masher or back of a large spoon.
  • Meanwhile saute vegetables in water until soft.
  • Add vegetables to tomato mixture.
  • Season to taste with herbs, salt and pepper.
  • Simmer for 20 minutes (or longer).
  • Add fish and simmer another 10-15 minutes or until fish is cooked.
  • Serve with rice or couscous.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
