Because of their rich flavor, cold fruit soups are Scandinavian favorites, and no doubt this will be a hit with you as well. This came from Betty Crocker's Soups and Stews. I have not tried this recipe.

  1. Place raspberries, sugar and wine in blender. Cover and blend until smooth. Stir in sour cream. Cover and refrigerate 1-2 hours until cold.
  2. Serve with dollops of sour cream and raspberries if desired.

My son and I made this for Christmas dinner, a heavy hors d'oeuvre affair. Ours was a very unusual offering, yet very festive as well. We served it in little juice glasses set out on a tray, each serving garnished with a single berry. Those who tried it either liked it quite a bit, or not at all. But we enjoyed it, and took home what was left over, which was just as good the next day. Full disclosure: My son owns a Vitamix, which makes this soup much smoother than one would obtain with a conventional blender, which cannot pulverize the raspberry seeds. Also, we used frozen raspberries, which are packaged by weight, not by volume, so we had to readjust the amounts accordingly.
