I did not like this recipe as written. Sauteing the zucchini with the onion until the ZUCCHINI is transparent THEN steaming for an additional 5 minutes would have left an utter mess. I caught that early on and sauteed until the ONION was transparent then steamed for 5 min. At that, the zucchini was still overly soft. However, I did like the mix of cilantro and zucchini. I would have never thought to mix the two and it was actually pretty good. If I do make this again, I would steam for a minute or two. I like my zucchini to have some structure.

  1. Place olive oil and garlic over medium heat in a pan.
  2. Sautee until garlic cloves turn lightly brown. Add diced zucchini and onion, sautee until zucchini obtains a transparent appearance.
  3. Add water, chopped cilantro, salt and pepper to taste. Cover, reduce heat and cook for five minutes.
