Cola Braised Pork Stew

  • Heat oil in large pot over high heat.
  • Add half of pork; sauté until brown.
  • Transfer pork to bowl.
  • Repeat with remaining pork.
  • Return pork to pot.
  • Turn off heat and slowly add cola into pot.
  • Bring to a boil.
  • Reduce heat to med-low, cover and simmer 30 minute.
  • Add garlic, soy sauce, ginger, mushrooms and half of the onions.
  • Cook and simmer until pork is tender, about 40 minutes.
  • Uncover and simmer until sauce is slightly thickened.
  • Season with salt and pepper; transfer to bowl.
  • Sprinkle with remaining onions.
  • Serve over rice.
