Growing up in South Africa, this was one of my family's favorite chicken recipes. I haven't searched for it here, so I don't know if it has already been posted.
- Place everything in a wide-bottomed pot.
- Cook over low heat until chicken is tender.
- Cook until coke is nearly gone; take care to watch it.
- Remove from heat when coke becomes a sticky sauce.
I live in the American South and we have made "Co'Cola" Chicken for a long time. This is an excellent version. We never tried the soy sauce, but it was great. It cuts the sweetness. For a sweeter version, leave the soy sauce out.
My wife is from South Africa and she puts potatoes, carrots and onions on the bottom of a roaster then puts the chicken parts, usually legs or what ever you have on hand on top, Then she adds almost a full liter of coca cola. Then sprinkles Knorr vegtable soup mix on top then covers and roasts until the meat is SOOOOOO tender. Really great!!!!
Very tasty! We made it with Coke Zero and it was great.
