    Gadgetsmidnight's Note:

    I was wanting a small serving of cake, but didn't want to make the whole box. This is what I came up with. It came out light and fluffy and hit the spot. I think it could be used with any boxed cake, but I used a Betty Crocker brand. Also, if you decide to use the real egg try beating the whole egg in a separate bowl and then pouring off about half.

    Units: US | Metric

    • 103.53 ml cake mix (Save the rest of the mix in a sealed container for later use.)
    • nonstick cooking spray
    • 44.37 ml oil
    • 88.74 ml water
    • 29.58 ml liquid egg substitute or 1 egg, lightly beaten

      Using a 10 to 16 ounce microwave safe coffee mug, spray the insides with the non stick spray.

      Add 7 TBS of the box cake mix. (Save the rest of the mix in a sealed container for later use.).

      Next add the oil and water to the cup and mix thoroughly.

      Finally, add the egg and mix well.

      Place in microwave and microwave on high for 3 minutes. The cake may rise above the top of the cup, but don't worry. When finished, check center with a toothpick. If pick comes out clean, then the cake is done.

      Allow to cool for several minutes and then turn cake out onto a dish or serve right in the coffee mug.

      Remember microwave strengths may vary and this might alter your time.

      First I have to say I've tried several differant Mug Cakes and been disappointed as they've always turned out to hard to even eat. I like the ide of Mug as with only 2 of us and DH not a big sweet eater there is always so much waste in regular cakes. Well, this on is REALLY differant. I followed the recipe exactly (except for adding frosting at the end) and it came out soft, rich and wonderful. It did overflow the mug and that was a bit of a mess, so wondering if i might just cut it all in half for a smaller cake. But that said, the taste was awesome, the texture soft and a great way to sastify the sweet hunger without wasting most of the cake. Really liked this and it's so easy I'll be teaching this to my DGSs who visit often and I know they'll love it. Made for PAC Fall 2011

      Oh my goodness, this was a delicious mug cake. I used a Double Fudge Chocolate cake mix, and it was positively delicious. I dusted the top with powdered sugar since I didn't have any frosting on hand. And it was a great treat for after lunch. I really enjoyed this recipe, Gadgetsmidnight. Made for 2009 Fall Pick-A-Chef.

      This cake however was perfect! Yummy and delicious! In the past I have made two other recipes for coffee mug cakes made in the microwave and both have ended in giant messes! For this recipe I used a Betty Crocker Spice Cake mix and 1/2 an egg. I also served it with a scoop of fudge ripple ice cream! Thanks for posting! Made for Zaar Chef Alphabet Soup Tag.
