Use this to marinate and baste chicken, spareribs or other cuts of pork. Marinate at least overnight. Prep time does not include marinating and cooling time.
- 1 cup strong coffee
- 1⁄2 cup molasses
- 1⁄2 cup red wine vinegar
- 1⁄4 cup Dijon mustard
- 2 tablespoons Worcestershire sauce
- 2 garlic cloves, minced
- 1⁄4-1⁄2 teaspoon sambal oelek
- Combine all ingredients in a non-reactive saucepan.
- Bring to a boil, stirring, and simmer 2 minutes.
- Let cool before using.
This is a good marinade. I used it on lean pork. The coffee blends into all the other flavors. If I made a full recipe, it would have been plenty for 16 pieces of pork.
