Delicious! For the coffee, I dissolved 2 teaspoons instant Espresso Powder in water, since I forgot to save some coffee from the pot. After stirring in the egg, I tasted it and thought it was missing something, so stirred in a teaspoon of almond extract. I am going to try other extracts also. Orange I think would be good! Made for tag game at Kittencalskitchen.com
- 118.29 ml extra strong coffee
- 118.29 ml cream, can also use milk
- 36.97 ml sugar
- 29.58 ml cornstarch
- 1 egg, separated
- whipped cream, garnish

- In a medium pan bring coffee, cream or milk, and sugar to a boil. In a small bowl add corn starch and dissolve in water. Constantly stirring, add cornstarch to coffee mixture and cook for 3 minutes. Remove from heat.
- Beat egg yolk and stir into coffee mixture, bring to a boil. Remove from heat. Fold in beaten egg white and pour into glass serving bowl. Chill thoroughly in refrigerator and decoreate with whipped cream before serving.
