  1. Cream sugar and shortening.
  2. Add egg, vanilla and salt.
  3. Beat well.
  4. Add 1 1/2 cups flour, baking powder and milk.
  5. Mix well.
  6. Pour into well greased muffin pans or use cupcake papers; fill 3/4 full.
  7. Mix together topping ingredients and sprinkle some on top of each muffin.
  8. Bake at 375° until done, about 20 to 30 minutes.

Very good muffins. Moist and dense and sweet (but not too sweet). I halved the topping, and half seemed like enough. Used brown sugar for the topping. I wasn't sure what to do with the extra tablespoon of flour because the recipe never called for it, so left it out -- should that be in the topping too?
