Cod over Lemon Basil Orzo

  • Bring 6 cups water, lemon juice and zest to a boil using a large saucepan.
  • While the water is coming to a boil heat olive oil in a large skillet over medium heat.
  • Add garlic and saute 2 minutes.
  • Add tomatoes and peppers, cook 4 minutes.
  • Add wine and simmer about 5 minutes.
  • Add orzo to boiling water cook aprox 9 minutes.
  • Sprinkle the cod fillets with salt and pepper.
  • Add to the skillet and bring to a simmer. Cover the pan with a tight lid and simmer about 10 minutes or until fillets are cooked through.
  • Drain orzo after 9 minutes and toss with basil.
  • Serve fillets over the orzo and topped with sauce.

  1. Another great recipe and one that is so easy and delicious! I followed the instructions and next time I might try another herb (although basil is one of my very favorites). It is nice to have the fish and orzo done together. Thank you. Made for Fall Pick a Chef 2011.
