cod flan with onion compote

this looks and tastes wonderful, and is so easy to prepare. makes a great appetizer course for a formal dinner, and can easily be multiplied

  1. preheat oven to 325.
  2. in a pan over medium heat, combine onion, wine, vinegar, salt, pepper.
  3. simmer 15 minutes until reduced, remove from heat.
  4. spray 4 ramekins.
  5. put cod, cream, egg white, salt& pepper in a blender, process until smooth pour into ramekins until half full.
  6. place ramekins into a large baking dish, fill with water halfway up the sides bake for 20 minutes or until set.
  7. spoon some onion onto 4 plates.
  8. unmold flans on top of onions.
  9. garnish with more onions and fresh sprigs of herbs.

This doesn`t mention when to add the sugar but I added it along with wine in step two. The onions were very good. As for the flan I was a little dissappointed. It needs the onions on top for the garnish because it`s so plain. It didn`t remove from the ramekins nicely. And cod is a lovely fish all on it`s own mild and flaky that when processed it just became more like mush. I just didn`t like the texture. I guess I was expecting a more moose like texture. The taste wasn`t bad.
