Cod Cakes With Dijon Tartar Sauce

  • Make the sauce by mixing all the ingredients and refrigerate.
  • Preheat oven to 350°F.
  • Cook potato in microwave 5 minutes until tender.
  • Mash and cool.
  • Add remaining ingredients and shape into 12 patties.
  • Add 1 tbsp oil to skillet and add 6 patties, cook 2 minutes on each side.
  • Spray a baking sheet with cooking spray and add cooked patties.
  • Repeat, then add 12 patties to oven, bake for 10 minutes and serve with sauce.

I made a couple of modifications: I used shallot instead of green onion, and I sauteed the shallot and green pepper together until just soft before mixing in with the rest of the ingredients. Otherwise, all the same. They were wonderful! I served them with some parslied orzo. I'd like to try them with fresh breadcrumbs next time and see what difference it might make.
     
  2. The cakes were seasoned perfectly! The sauce was very good! I have never eaten a sauce with my cakes before but will from now on. I used plain bread crumbs.
     
  3. My DH raved about these cod cakes. I had some frozen cod that had seen better days and was even concerned that it wouldn't be a fair test of this recipe. Not to worry...I think this recipe would make any fish a delicious treat. I'd never used potato in a fish cake before or Panko in place of breadcrumbs and really liked how they just melted and disappeared into the fish cake adding a great texture without distracting from the wonderful taste of the cod. I can't rightly judge the sauce as I never use pickle relish and just made the dijon sauce without it. Great recipe Chia.
     
  4. These cakes were wonderful! I also used plain breadcrumbs. I loved the sauce, tangy and sweet! I make salmon cakes and I am going to use this recipe to make them next time. They would be awesome!! Thanks for a definite keeper chia ; )
     
  5. PS I made this the other night, and it turned out GREAT! I am single, and sometimes cook for only me, so I had a few leftovers, but I put them in the freezer. I took them out last night, popped them in the oven, and they were just as good as they were the first time! I didn't have the panco OR bread crumbs however(shame on me) so I used Shake n Bake but it still turned out delicious :)

<p>latest update, as all my fb friends know i have been very ill for the past 4 mos, but now i am on the road ro recovery. i've had 2 surgeries and broke nt elbow a week after the first one, which basically incapacitatedme forr 2 mos. happy to say i am doing pt, anf will hopefully be able to cook again</p> <p>i stopped working so i could spend more time in my fla house renovating, but this was a minor setback, going to do the bathrooms this summer.</p> <p>&nbsp;</p> <p><br />in NY i used to have an (at home) jewelry business, but i incorporated it into the store's gift dept., they sell it for me now. <br />cooking is my passion, my hobby, my relaxation, but i love going out for a good meal anytime. being born and growing up in manhattan, ny gave me the opportunity to try many new foods over the years, in many great restaurants. and travelling with my dh enlightened me to the wonderful ingredients and cuisines of san francisco, among other places. <br />the new corporate spouse deal is to do a day of cooking lessons/lunch, and shopping, so i have seen demo classes in ft lauderdale, san antonio, atlanta in the past few years plus taken a few cooking classes in chinese dim sum and noodles in joseph poon's, in philly. <br />several years ago i had the pleasure of being on several of the food network shows, ready set cook and taste test, which was like food jeopardy. i didn't win either, but it was so much fun!
