Really easy -- almost idiot proof! I was always looking for a non-dairy recipe, but could never find one. I finally just came up with this on my own, and it tastes great!
- Whip the coconut milk with the instant pudding.
- Pour into a freezer container and freeze for several hours.
- To serve, scrape sorbet with a heavy spoon and serve shavings in a dessert glass.
Man, I reallllly wanted to love this Mirj! I did it in my ice cream machine and the texture was like soft serve ice cream but it had a funky aftertaste. It could of been my coconut milk. I have made ice cream in my machine with recipes based on milk and pudding mix so I dont think it was the machine. I'm sorry for giving it 3 stars though:(
Super cheap, suoer easy and super delicious. My dh can't have dairy ,which leaves him out when I make homemeade icecream. I stumbled across this recipe and thought why not. Boy am I ever glad that I made this.. My dh and my 18 month old gobbled it up . Thanks Mirj for a great recipe that will definitely be made again and again
