My mom gave me this easy recipe. We just had it the other night with a pineapple & tempeh stir fry recipe from Vegetarian Times - it was delicious!! We used jasmine rice in this recipe.


  1. Rinse rice.
  2. Bring rice and milk to a low boil. Put lid on and simmer for 20 minutes or until done. Check to make sure it doesn't burn - we had to add a little extra water to ours.

The first time I made this recipe the jasmine rice absorbed the coconut milk and was still hard. The second time, I simmered the rice with 1 cup water, once absorbed, added the coconut milk...much better! A little sticky for my liking, so I need to work on the ratios. Good flavor. PAC Fall '12
