This is a simple and delicious way to jazz up your white rice. Serve it with any tropical dish for a great twist!

  1. In a medium saucepan, bring coconut milk and water to a boil. Stir in the rice and the salt, cover and reduce the heat to low. Simmer (never removing the lid) for 15 minutes, or until all of the liquid is absorbed.

I make this all the time and just realized I never reviewed this recipe. It's so easy to make! I also will add ingredients to "jazz" it up. Some times I add some chopped cilantro and lime zest, curry powder and raisins, - whatever goes with what my main entree will be.
