This recipe is simple to make and tastes incredible! The rice turns out fluffy every time. I like to make it when I'm not feeling well, as it is very soothing on the stomach, but its also great as a side dish.


  1. Stir together coconut milk and 1 can of water. Add rice and salt.
  2. Bring mixture to a boil; lower heat and simmer, covered, for 45 minutes without stirring. When finished, fluff rice with a spoon.
  3. Note that other types of rice will have different requirements for liquid amounts and cooking time - this is for Basmati or other longer grained rice. If you want something a little fancier, this is great with almond slivers. Peas and carrots are also a nice addition.
