Creamy coconut and a hint of lime add a deliciously different touch to this lovely rice recipe.
- Place the rice in a saucepan with the limejuice and coconut milk. Add enough water to just cover the rice and bring to the boil. Simmer for 5 minutes.
- Place the lid tightly over the pan and leave for 15 minutes. Fluff with a fork and serve immediately.
This was not quite as good as I envisioned, but I think that was my fault. I meant to increase the recipe to 1 1/2 times, and accidentally doubled the lime juice. It was pretty limey, and not enough coconut, but entirely my fault!!
