- 1 lb medium shrimp, peeled and deveined
- 1 1⁄2 cups Ritz crackers, rolled fine with rolling pin
- 1⁄4 cup shredded coconut
- coconut syrup (from Hawaii)
- Roll shrimp in coconut syrup. Mix finely rolled Ritz crackers with coconut. Roll coated shrimp in cracker- coconut mix. Shake off excess. Deep fry until golden brown.
These had wonderful flavor, however the coconut/cracker crumb mixture didn't stick very well, most came off in the deep fryer. The coconut syrup did make for a delicious dipping sauce. Thanks for posting. Made for you're football pool win 2011.
