    Ingredients:

    Serves: 4-6

    Units: US | Metric

    • 1 lb medium shrimp, peeled and deveined
    • 1 1/2 cups Ritz crackers, rolled fine with rolling pin
    • 1/4 cup shredded coconut
    • coconut syrup (from Hawaii)

    Directions:

      Roll shrimp in coconut syrup. Mix finely rolled Ritz crackers with coconut. Roll coated shrimp in cracker- coconut mix. Shake off excess. Deep fry until golden brown.

      These had wonderful flavor, however the coconut/cracker crumb mixture didn't stick very well, most came off in the deep fryer. The coconut syrup did make for a delicious dipping sauce. Thanks for posting. Made for you're football pool win 2011.
