This is an adaption of a recipe I found online. The other recipe had vanilla extract but I thought the flavor would be better if coconut flavoring extract was used. I also added the shredded coconut flakes.
- 1 (15 ounce) can coconut milk
- 1⁄2 cup sugar
- 1 cup ice cube
- 1⁄2 cup heavy cream
- 1⁄2 cup milk
- 1⁄4 teaspoon imitation coconut extract
- 2 tablespoons unsweetened dried shredded coconut (optional)
- Drain the coconut water off the full fat coconut milk. Use the cream of the coconut milk. Put in pan and add sugar. Stir and heat just until sugar is dissolved. Add ice cubes and stir until ice cubes melted and coconut mixture is cooled down. Add heavy cream, milk, coconut flavoring, and coconut flakes. Pour in popsicle molds and freeze.
