This is such an easy recipe--just mix all the ingredients in a blender.
- 2 cups milk
- 3⁄4 cup sugar
- 1⁄2 cup biscuit mix
- 1⁄4 cup butter, at room temperature and cut into pieces
- 4 eggs
- 1 cup flaked coconut
- Preheat oven to 350 degrees.
- Grease a deep 9 inch pie plate and set pan on baking dish to avoid spills.
- Place all ingredients in a blender, cover, and blend for 20 seconds. Pour into prepared pie plate. Bake for 50 minutes or until puffed and golden brown.
Reminded me of a giant macaroon! Delicious and so easy. I used 1/2 cup Splenda and 1/4 cup sugar, to cut down on the sugar. Served with fat free Cool Whip. Thanks for a easy special treat!

Being a total fan of Bisquick... this recipe was just great. Quick ... and yummy. Glad we served with whipped cream -- just added the final touch to a delicious dessert recipe. :) rickie
