Coconut Oatmeal Raisin Cookies

A happy accident! Making cookies for a family party, I didn't have enough coconut, so I substituted some raisins. The results were so good the family still asks for them, including my father-in-law. He doesn't even like coconut!

  1. In large mixing bowl, cream butter, sugar, and eggs. Add vanilla.
  2. In medium bowl, mix flour, baking powder, baking soda, and salt.
  3. Add the dry to the wet and mix well.
  4. Add oatmeal, coconut, and raisins and mix by hand.
  5. Drop by one inch rounds onto cookie sheets.
  6. Bake 375 degrees for 9-12 minutes.

A really great cookie! These are very soft and delicious. I used white flour and substituted rasins with walnuts. Yum Yum Yum

These were absolutely delicious! I added in some wheat germ and some flaxseed meal and used 1 cup of whole wheat flour and 1 cup all purpose/white. My kiddos love it, I love it.....it's a winner! Thanks for the wonderful recipe!

these were pretty good. i used chocolate chips instead of raisons and threw in a few walnuts. there was too much coconut for my taste but maybe its just me. good shaped cookie and good chewiness though. would be good with cinnamon too!
