I recently found a collection of muffin recipes tucked away. I can't wait to try these!

  1. Whisk together the butter, honey, buttermilk and eggs.
  2. Sift together the flour, baking powder and soda.
  3. Toss coconut into dry ingredients.
  4. Add wet ingredients to dry ingredients and mix together just enough to thoroughly combine.
  5. Spoon batter out into greased or paper-lined muffin cups and bake for 25-30 minutes in a 375°F oven.

these are so good! My kind of recipe...I love coconut and only cook with whole wheat flour and natural sugars now...thanks for posting.
