A lower fat substitute for coconut milk. Not as good as the regular coconut milk but good if you are watching calories.
- 1 cup milk (whole or low-fat) or 1 cup yogurt or 1 cup evaporated skim milk
- 1⁄2 teaspoon coconut extract
- Mix ingredients well.
