Coconut Milk Bean Soup

ingredients
- 14.79 ml oil
- 118.29 ml onion, chopped
- 118.29 ml green pepper, chopped
- 4.92 ml curry powder
- 4.92 ml salt
- 1.23 ml pepper
- 44.37 ml butter or 44.37 ml margarine, softened
- 236.59 ml tomatoes, fresh, seeded and cut into chunks
- 591.47 ml kidney beans, canned with liquid (or black-eyed peas)
- 473.18 ml coconut milk
- 709.77 ml water
- 118.29 ml cooked rice
- 118.29 ml coconut, shredded
directions
- In a large saucepan, heat the oil and sauté the onions until softened (maybe about 5 minutes).
- Add green peppers, curry powder, salt, pepper, butter or margarine, and tomato, and simmer for 2 minutes.
- Add the kidney beans with their liquid, the coconut milk, and water.
- Simmer gently for 10 minutes, Stir in the cooked rice and heat for about 2 minutes.
- Ladle into bowls. Top each serving with 1 Tablespoon of shredded coconut, and serve.

This was excellent! Even the picky eaters loved it. I think next time I will add a little more beans, rice, and tomatoes as I like a lot of "stuff" in my soups. The flavor was fantastic though. I served it with fresh pumpernickel bread and it went really well together. This also helped to teach our kids about the foods that people in Africa eat.

Excellent recipe! Even THE PICKY ONE loved it - she wants it for her birthday dinner! I wish I had doubled the recipe as everyone loved it & went for 3rds. The only thing I would do differently would be to saute the onions longer as they didn't soften up enough. Delicious, fast & easy! Made for the Vegan Swap 12/08.

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!
We are a couple, Jason and Mollie, that loves to cook together. We have two wonderful DD's, Enjoli (9) and Emily (7) that make life so much more fun! I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available. Zaar has been a tremendous help!
