  • Preheat oven to 325.
  • Place egg whites in mixing bowl and beat until stiff peaks form.
  • In small bowl combine shredded coconut, coconut flour, dash of salt, stir and add to egg whites.
  • Stir in vanilla.
  • Drop from tablespoon onto cookie sheet lined with parchment paper.
  • Bake for 15-20 minutes, or until edges get crispy and golden.
