My mom absolutely ADORES these. If you are a coconut fanatic then you will too :)
- 1 1⁄2 cups coconut flakes
- 3 tablespoons matzo meal
- 2 egg whites
- 1⁄3 cup sugar
- 1⁄8 teaspoon salt
- 1⁄2 teaspoon almond extract
- Combine coconut, sugar, Matzo Meal, and salt in a mixing bowl.
- Stir in egg whites and almond extract and mix well.
- Drop from teaspoon onto baking sheet and bake at 325 degrees for 20-25 minutes.
