  1. Preheat oven to 350 with racks in the upper and lower thirds.
  2. Combine butter and sugar and beat until light and fluffy.
  3. Add lime oil; beat to combine.
  4. Gently fold in lime zest, salt, flour and coconut. Blend well.
  5. Lightly flour hands and roll dough into small,about 1-inch, balls and place about 1 1/2" apart on an ungreased baking sheet.
  6. Bake until puffy (not browned)and bottoms are just golden, about 15 minute.
  7. Meanwhile, combine coating ingredients in a gallon size plastic bag. While cookies are still warm, toss them in the coating.
  8. Remove and transfer to wire rack to cool completely.

This is by far the BEST new cookie recipe that I have tried in a long time. I made them for a Christmas open house. I added a couple of drops of green food coloring to the dough to make them more festive. I love the lime and coconut combination. The cookies are rich and beautiful.

Divine! I may never make macaroons again! I used sweetened coconut, doesn't seem to hurt recipe.
