Coconut Lime Thai Snowballs

  • Preheat oven to 350 with racks in the upper and lower thirds.
  • Combine butter and sugar and beat until light and fluffy.
  • Add lime oil; beat to combine.
  • Gently fold in lime zest, salt, flour and coconut. Blend well.
  • Lightly flour hands and roll dough into small,about 1-inch, balls and place about 1 1/2" apart on an ungreased baking sheet.
  • Bake until puffy (not browned)and bottoms are just golden, about 15 minute.
  • Meanwhile, combine coating ingredients in a gallon size plastic bag. While cookies are still warm, toss them in the coating.
  • Remove and transfer to wire rack to cool completely.

  1. This is by far the BEST new cookie recipe that I have tried in a long time. I made them for a Christmas open house. I added a couple of drops of green food coloring to the dough to make them more festive. I love the lime and coconut combination. The cookies are rich and beautiful.

  3. Divine! I may never make macaroons again! I used sweetened coconut, doesn't seem to hurt recipe.
     
  4. This recipe was very good. I just had one problem, and I Don't think that it was with the recipe. All of my cookies this year that are suppose to be balls are flattening out! If anyone knows of a solution, Zmail me!
