Coconut Lime Evening Milk for Grown Ups

"This actually is a recipe for people who cannot have sugar containing cocktails. I've never been fond of cocktails except Bloody Mary and Pina Colada (home made with only coconut milk, pineapple juice and white rum), and I did like Gin Tonic and Mint Julep. Life didn't become exactly worse not being able to continue drinking that, as I've certainly not had more than three drinks of each my whole life ;-) Actually I always prefered drinking red wine or beer - but that's history, too. About the only things I can drink without any problems are water and coffe, which is okay with me. But you cannot imagine how hard it seems to be for OTHERS to watch me just drinking water during a party. During the last party I really got fed up with those constant condolations - I gave in, break down... So I creamed together what I had on hand and thought would agree with me. This is it. The lemon infused wodka doesn't contain sugar, it's just pure alcohol with lemon flavor. I used some stevia in it but am not sure whether it was necessary at all. The stevia I use is encymatically fermented steviosid, not the green stuff which tastes of sweet hay. It' sweet and has nearly no aftertaste if you don't overdose it. Maybe you could use something like splenda, if desired. Also I used a very thick coconut milk and normal cow's milk. No idea whether this would work with soy milk, but maybe it would be better to use rice milk because of it's natural sweetness."

  • First crush the ice (if the blender has an ice-crusher function).
  • Then mix at highest speed for about 60 seconds.
  • Enjoy!

  1. I tried this very early this morning (around 1 am) and I really enjoyed it. Used my homemade vanilla infused vodka as it's what I had and I used all coconut milk (I have a huge carton of it). It was actually quite tropical tasting with the lime and coconut and overall very pleasing indeed. Gentle and soothing to drink and tastes very good. Thank you Mia for sharing this. :D
