Every New Zealand child learning their way around the kitchen makes this at one time or another. Classic supersweet confectionery.

Ingredients Nutrition

  • 2 cups sugar
  • 12 cup milk
  • 12 cup desiccated coconut
  • red food coloring, to turn it pale pink

Directions

  1. Boil together for exactly 5 minutes.
  2. Then remove from heat and beat until starting to set.
  3. Pour into lined heat proof dish and score as it is setting.
  4. Allow to set.

I made this after my last batch of Coconut Ice failed (soft). How hard could Coconut Ice be! This worked perfectly. I loved the 'boil exactly for 5 minutes' which did the trick. I did, however, add a lot more coconut. This worked out well. Thanks Missy Wombat for foolproof Coconut Ice.
