- 1 cup jasmine rice
- 1⁄2 cup coconut milk
- 1 1⁄2 cups water
- 2 teaspoons thai coconut curry broth (mix)
- 1⁄4 cup parsley, chopped
- Following package directions, cook rice with water, Coconut Milk and Coconut Ginger Soup Mix.
- When done, toss in chopped parsley and serve.
