this was so good & my guy loved it - definitely a keeper. always looking for new ways to spice up the every week, main dish accompaniment veggies. will def add the crystallized ginger next time. i didnt have any of that i just sprinkled a lil ground ginger at that part. the ginger root, garlic, and lemon juice were so complimentary and smelled great simmering up in the skillet!

It's a winner! The ingredients compliment the carrots making for a vegetable side dish now in my Holiday Fare Cookbook. Yes on the gingerroot, the garlic and the fresh lemon juice - went with your changes and found the suggested times right on - that could mean our oven temps are the same. I hesitated on the coconut - found it a wonderful addition - this dish makes for great presentation.Thank you for sharing!
