I used cauliflower in place of tofu per your comments in the instructions. It was delicious! Although I like tofu and would be curious to try the dish with it also. I ended up using 3 Tbsp curry powder and 1 tsp ginger powder with just a tiny bit of chili sauce (I can't handle too much heat). My favorite thing about this curry is the fresh tomato added at the end, which lends such a nice fresh tang to the dish. I peeled my tomato before adding it. Served with rice. Thanks, afarrell727!
