This is another recipe my family enjoys during summer months..light, not heavy
- 4 egg whites, beaten stiff
- 1 pinch salt
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1⁄2 cup sweetened flaked coconut
- 1⁄2 cup chopped toasted pecans
- Mix and pour all ingredients into a buttered 9" pie pan and bake at 350* for 20 minutes.
- Serve with whipped cream or Cool Whip topping -- .
