- 1 cup cooking oil
- 1 1⁄2 cups white sugar
- 2 beaten eggs
- 1⁄2 teaspoon vanilla
- 1 cup coconut
- 2 1⁄4 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- Cream oil and sugar.
- Add eggs, vanilla and coconut.
- Blend in remaining ingredients.
- Drop by teaspoon onto greased cookie sheets and bake 10-12 mins at 350°F.
Very good cookies! Simple to put together. They were more chewy than crispy, but that didn't stop me from eating them! Keeper, by all means.
